
Embracing the growing trend of flexitarianism Penny Blue bar and restaurant in the historic city of Carlisle, Cumbria launches new vegan menu options.
Across the UK vegetarian and vegan lifestyles are growing in popularity and according to a recent report by Mintel, over 34% of British meat eaters have reduced their consumption of meat. Growing consumer awareness about health and wellness, climate change and sustainability is leading to an increasedwillingness, especially amongst millennials, to try different plant-based options and to embrace a flexitarian lifestyle.
The flexitarian approach is a semi-vegetarian style of eating that encourages less meat and more plant-based foods, with the benefits of reducing your carbon footprint and improving your health. There are no set rules, making it an appealing option for people who are looking to cut back on animal products but not eliminate them completely from their diet.
The Halston is not alone in launching new animal
The new dishes at Penny Blue are designed to provide delicious animal free alternatives to the most popular meals on the restaurant menu – Soya plant based katsu curry, Vegan burger and Pale ale battered Phish (banana blossom) – join the full Vegan English Breakfast launched earlier this year.
Head Chef Anthony Connor says, ‘I love my meat and fish and was initially a bit doubtful about creating tasty vegan alternatives of our customers favourite dishes. Our senior Sous Chef Gavin Winder took a research trip to a vegan food festival with The Halston’s Business Development Manager Claire Hughes. They came back fired-up by the different flavours and textures sampled. It’s been exciting working with Gavin in the kitchen to see how we could incorporate these techniques and ingredients into our menu at Penny Blue. We’re pretty chuffed with the resulting dishes, my personal favourite is the “Phish”. I hope that our diners will be curious to try them too, whether they follow meat, vegan or flexitarian diets.’
