2021 GBM champion to serve up his banquet menu

Rothay Manor’s head chef Dan McGeorge, crowned series champion of Great British Menu 2021 will be serving up his competition dishes throughout the summer as an evening tasting menu at the Ambleside restaurant, including his champion of champions title winning dish ‘Give A Dog A Bone’.

The four-course tasting menu inspired by this year’s theme of ‘British Innovation’, features Dan’s full menu including his starter, fish course, main, and dessert as follows:
His starter called ‘Doctor’s Orders’, a deconstructed take on a classic scouse, is made with Herdwick lamb loin, BBQ carrot, a carrot top emulsion, pickled onion, potato crisp, toasted yeast and a lamb consommé. This dish celebrates Lucy Cradock, Liverpool’s first practising female doctor.

His fish course called ‘Deep Blue Sea’ consists of barbecued monkfish, served with cockles, kohlrabi and a silver submarine flavoured with Xo sauce. This dish is a nod to early submarine designer Reverend George Garrett, whose first design sank off the coast of Rhyll.

The main course called ‘The Amazing Adventures of Isabella Bird’, marks the achievements of this intrepid explorer, orientalist and first female member of the Royal Geographical Society. The course is made up of six Asian inspired dishes, one from each of the countries Isabella’s visited and includes: Korean fried lamb sweetbreads with a sticky BBQ sauce, Japanese tempura vegetables, Vietnamese morning glory with oyster sauce, soy marinated quail eggs, stir fried lotus root and barbecued char sui pork.

His final course, called ‘Give A Dog A Bone’, features a bone shaped milk chocolate mousse, with a miso caramel centre, sprayed in chocolate, served with a miso caramel sauce, salted caramel ice cream, honeycomb miso tuile and yuzu gel and zest. This dish celebrates the training of the first four guide dogs by Muriel Crooke and Rosamund Bond.

The menu will be available to diners for a limited time only and must be pre-booked. The menu is priced at £90 per person. A matched drinks pairing is also available priced at £48 per person.
